Glasgow-based alt protein startup, ENOUGH, raised $43.6M in a Series C round to expand production of ABUNDA mycoprotein, a meat alternative made from fungi. The funding will allow ENOUGH to double its mycoprotein production capacity from 10,000 to 20,000 tons a year, with its Netherlands-based factory co-located within a Cargill starch facility.
