After receiving full regulatory approval for the sale of their cultivated chicken in the U.S last month, reservations to enjoy GOOD Meat at the China Chilcano restaurant in Washington D.C officially opened on 25 July. Chef José Andrés’s new dish, “Anticuchos de Pollo,” consists of cultivated chicken marinated with anticucho sauce, native potatoes and ají amarillo chimichurri. The dish is included as part of a $70 tasting menu.
